How long do I have to sharpen the blade before my knife is sharp?
The amount of time required will vary when a knife is sharpened for the first time, depending on the condition of the blade and the quality of the steel. On average, it takes five minutes. The edge must first acquire the chosen 15° or 20° grinding angle. However, thanks to the constant grinding angle, only a few rolls back and forth are needed for subsequent resharpening.

How can I clean the diamond sharpening discs?
To remove grinding residue off the diamond discs, simply dab with a damp cleaning rag.
How do I sharpen knives that are higher than the sharpener?
To grind particularly broad blades, where the cutting edge stands higher than the grinding disc, elevate the sharpener with a suitably thick cutting board to ensure contact with the cutting edge is within the radius of the diamond grinding disc.
How do I know what angle to sharpen with?
Generally, western knives use the 20° angle, while Japanese knives will be 15°. To find out for specific knives, a quick Google search should give you the answer.
Will the diamond discs wear out?
Our discs are made with diamond, the hardest material known to man. When used correctly the diamond discs shouldn't ever need replacing.
